Macarons: the French classic, baked in Bratislava

    A macaron is a small almond biscuit with a crisp shell, a soft centre and a layer of cream holding the two halves together. It looks delicate, and making one is a question of precision rather than inspiration. Here is how ours are made and when they earn their place on the table.

    What goes into a macaron

    Almond flour, icing sugar and egg whites whipped to stiff peaks. The ratio of those three, and how gently they are folded together, decides whether the shell comes out smooth and whether it grows the little ruffled foot that tells you it was made properly. The filling is ganache, buttercream or fruit.

    When to order macarons

    Macarons do most of their work on a candy bar or dessert table at weddings, corporate events and birthdays. They sit well next to a cake, guests help themselves, and nobody needs a plate. We also supply them regularly to cafés around Bratislava.

    Macarons are part of our regular range. For larger quantities for an event, order at least 48 hours ahead. Keep them in the fridge and take them out a few minutes before serving. They are at their best within three days of collection.

    Frequently asked questions

    Are your macarons gluten-free?

    Macarons are made with almond flour, so there is no wheat flour in them. If you have coeliac disease, tell us when you order so we can prepare them separately. We bake in a kitchen that also handles wheat flour, so we cannot promise an allergen-free environment.

    Which flavours do you make?

    The regulars are Belgian chocolate with salted caramel, raspberry with white chocolate, pistachio, lemon, and coffee with vanilla. The list changes with the season, so ask what is running that week.

    How should macarons be stored?

    In the fridge, and out of it a few minutes before serving. They are at their best within three days of collection.
