Raw cakes
A raw cake never sees the oven: nothing in it is heated above 42 °C, and there is no flour, no refined sugar, no eggs and no dairy. We have made custom cakes in Petržalka since 2012, and we build the raw ones from dates, nuts, coconut oil, raw cacao and fresh seasonal fruit, so they suit vegans as well as anyone after a lighter dessert without animal products. A raw cake carries a surcharge on top of the price of the comparable cake from the regular range; the calculator shows the exact figure for the size you pick. Please order at least 48 hours ahead.

What a raw cake is
Raw means no oven. Nothing in the cake is processed above 42 °C, which keeps the enzymes, vitamins and nutrients of the ingredients intact. The base is a blend of nuts and dates, and the fillings are made from soaked cashews, coconut cream and natural flavourings.
Every raw cake is naturally vegan and gluten-free, contains no refined sugar, and is made without preservatives or artificial colourings.
Raw flavours we make
Raw chocolate: a cashew base with raw cacao, coconut oil and agave. Intense chocolate without the heaviness.
Lemon and coconut: fresh and summery, a coconut base with a lemon cashew filling and shredded coconut.
Raspberry: cashew cream with fresh raspberries on a nut crust.
Mango and passion fruit: layers of mango and passion fruit on a coconut base.
Matcha and vanilla: Japanese green tea matcha with a vanilla cashew cream.
Raw brownie: a chocolate and date base with pecans, finished with a cream of almond butter and raw cacao.
The ingredients we work with
- Soaked cashews as the base of the creams
- Almonds, pecans and walnuts for the crusts
- Medjoul dates as the natural sweetener and binder
- Cold-pressed virgin coconut oil
- Raw cacao powder and cacao butter
- Agave and maple syrup
- Fresh and frozen fruit with no added sugar
- Spirulina, matcha, acai and lucuma for colour and flavour
Who orders raw cakes
- Vegans and vegetarians
- People avoiding gluten or dairy, since a raw cake contains neither
- Anyone cutting down on refined sugar and processed ingredients
- Anyone curious about a cake built from nuts, fruit and cacao instead of sponge and buttercream
Storage and shelf life
Keep a raw cake in the fridge at 2 to 6 °C and it keeps for 4 to 5 days. Frozen, it keeps for up to a month, and after thawing in the fridge it tastes the same as fresh. Keep it covered so it does not pick up other smells from the fridge.
Frequently asked questions
Are raw cakes healthier than regular cakes?
They contain no refined sugar, no flour and no dairy: the sweetness comes from dates, the richness from cashews and coconut. They are still a proper dessert with plenty of calories from nuts, so think of them as a different kind of cake, not a diet food.
Does a raw cake taste as good as a baked one?
It tastes like its own thing: densely creamy, intensely fruity or deeply chocolatey, and it leaves a pleasant lightness behind. Most people trying one for the first time are surprised how much they like it.
Can I order a raw cake for a wedding?
Yes. We build tiered raw wedding cakes with fresh flowers or a plain minimalist finish. Book 6 to 8 weeks ahead, or 3 to 4 months for a wedding between May and September.
Are raw cakes gluten-free?
Yes, every raw cake is naturally gluten-free: no flour, no grains of any kind. They are made in the same kitchen as our other cakes though, so if you are ordering for someone with coeliac disease, please tell us and we will talk it through before you order.
How does a raw cake survive delivery?
Raw cakes hold their shape at up to 20 °C and we deliver across Bratislava in a refrigerated van, so the cake arrives the way it left the kitchen. Delivery within Bratislava is €10, pickup at Ovsištské námestie 1 is free. In summer we recommend pickup or a morning delivery slot.
How far ahead do I need to order?
At least 48 hours for a standard raw cake. For a tiered or wedding version, 6 to 8 weeks is comfortable, and summer wedding dates are best booked 3 to 4 months ahead.
