Gluten-free cakes: how they taste and when to choose one

    Gluten-free cakes have a reputation: dry, crumbly, not much flavour. The gluten-free cakes we bake are hard to tell apart from the classic version, and the reason is entirely in the flour.

    Why most gluten-free cakes disappoint

    Wheat flour is what gives a sponge its structure. Swap it straight out for rice or corn flour and you get something dry that falls apart on the fork. We use our own gluten-free flour blend, which took a few years of testing before the texture matched a wheat sponge.

    What is in our gluten-free sponge

    Rice flour, tapioca starch and psyllium. Psyllium is the part that matters: it does the job gluten does, holding the structure together so the sponge does not crumble. What comes out is a sponge that keeps its shape, stays moist and has the same chew as the classic one.

    Gluten-free and lactose-free at the same time?

    Yes, on request: a gluten-free sponge with a lactose-free cream. It is the version to order when a guest has more than one intolerance. Choose both options in the calculator.

    Choosing gluten-free without coeliac disease

    Plenty of customers order gluten-free with no medical reason. Usually one guest at the table has coeliac disease and it is simpler to make the whole cake safe than to bake two. That works: the taste barely changes, and the price difference shows in the calculator before you confirm.

    Macarons are the exception in the other direction: they are made from almond flour, so they are naturally gluten-free with no surcharge at all.

    How to order one

    In the online calculator, pick “Gluten-free” under the dietary options. Everything after that is the same as a classic cake: delivery anywhere in Bratislava is €10, and pickup at the studio in Petržalka is free. The minimum notice is 48 hours.

    Frequently asked questions

    Are your gluten-free cakes certified for coeliacs?

    No. We bake in a kitchen that also handles wheat flour, so we cannot promise a gluten-free environment. If your coeliac disease is severe, talk to us before you order and we will tell you honestly what we can and cannot guarantee.

    Does a gluten-free cake taste the same as a classic one?

    Close enough that most people do not notice. Our own flour blend uses psyllium, which keeps the structure and the moisture that rice flour on its own loses.

    How much more does a gluten-free cake cost?

    There is a surcharge on top of the price of the classic cake. The calculator shows the exact figure for your size before you confirm the order.
