Five ways to keep a cake fresh until you serve it

    A custom cake is fresh food with no preservatives, so it needs a little more care than something off a shelf. These five points cover almost everything that goes wrong between our kitchen and the table.

    1. Keep it in the fridge

    Cakes with buttercream, mascarpone or whipped cream belong in the fridge at 4 to 6 degrees. Take the cake out 20 to 30 minutes before serving so the cream softens and the flavour comes back.

    2. Keep it away from smells

    Cake picks up whatever is around it. Leave it in the box we packed it in, or cover it. Do not park it next to cheese, smoked meat or a chopped onion.

    3. Fondant does not like damp

    Fondant and hand-modelled figurines suffer in humidity. In a fridge that runs damp, fondant starts to shine and go tacky. If you can, keep a fondant cake in a cool room out of direct sun and serve it the same day you collect it.

    4. Carrying it in the car

    Put the box on a flat surface, ideally on the floor in front of a seat or, outside high summer, in the boot, never on someone's lap. In summer, run the air conditioning. We deliver tiered cakes ourselves and assemble them on site.

    5. Leftovers within two to three days

    Cover a cut cake and finish it within two or three days. Press cling film against the cut face so the sponge does not dry out. Cakes with fresh fruit want eating sooner.
