Raw cakes: no baking, no refined sugar

A raw cake is a dessert made without baking and without refined sugar, built from nuts, dried fruit, coconut oil and cacao. It does not spike blood sugar the way a classic cake does, and it still tastes rich. Here is what to expect from one.

    What a raw cake is

Ground nuts and dates take the place of flour and sugar. The filling is usually cashews, coconut cream and fruit. Nothing goes in an oven; the cake sets in the cold. That is also why the ingredients keep more of their flavour and their nutritional value.

    Who raw cakes suit

    • Vegans, since there are no eggs, butter or milk in them
    • Anyone cutting down on refined sugar
    • Anyone on a gluten-free diet, because the base is naturally free of gluten
    • Anyone who likes a strong fruit and nut flavour

    How they taste

A raw cake is denser and fuller than a baked sponge, closer to a good chocolate praline than to a slice of birthday cake. The combinations people come back for are chocolate and hazelnut, raspberry and cashew, and lemon and coconut.

    Ordering and storage

We make raw cakes to order for birthdays and weddings across Bratislava, with at least 48 hours' notice. If you are looking for a dessert without sugar for someone diabetic, look at sugar-free cakes as well. A raw cake keeps in the fridge for several days; leave it out for a few minutes before serving so it softens. The calculator gives you a price.

    Frequently asked questions

    Are raw cakes really sugar-free?

There is no refined sugar in them. The sweetness comes from dates and dried fruit, which do contain natural sugars, but they raise blood sugar more gently than a classic cake.

Are raw cakes suitable for coeliacs?

The base is naturally gluten-free, since we use nuts and dates instead of flour. Tell us about coeliac disease when you order so we can prepare the cake separately. We bake in a kitchen that also handles wheat flour.

How do I store a raw cake?

In the fridge, where it keeps for several days. Leave it out of the fridge for a few minutes before serving so it softens and the flavour opens up.

    Are raw cakes vegan?

Yes. There are no eggs, butter or milk in them, so they work for vegans and for anyone avoiding lactose.
